The project series is a range dedicated to experimentation with new techniques. In this particular case, The wine has been created using concrete eggs as the fermentation and maturation vessel. The egg shape helps to keep lees in suspension leading to the coating mouth-feel of the wine. The egg shape also helps regulating temperatures during ferment leading to cooler fruit characters that don't feel baked or cooked. This wine offers a substantial palate of Cherries and black plums followed by dried herbs and hints of chocolate.
